Pineapple Sorbet

Ingredients:
2 cups ripe Campo Alegre pineapple cut in cubes
3/4 cup pineapple juice
2/3 cup + 2 tbsp. sugar

Instructions:
Preheat the oven at 400 F. Put the pineapple cubes on a tray with parchment paper and add 2 tablespoons of sugar on top. Bake for 20-25 minutes until the pineapple is soft (you can skip the first two steps, but baking the pineapple makes its flavor stronger when frozen). Add the pineapple juice and remaining sugar in a pot, let it simmer at medium heat until the sugar is dissolved. Blend the syrup and the baked pineapple chunks in a blender for 2-3 minutes until it’s soft. Transfer to a container and freeze for 6 hours until it is solid.
